Ingredients:
2 cups
Flour ½ cup white sugar
3 teaspoons baking soda
½ teaspoon salt
¾ cup 100% apple juice
1/3 cup vegetable oil
1 egg (can substitute for 3/4 cup all-natural applesauce)
1 teaspoon ground cinnamon (I added more, I love cinnamon!)
2 cups apples, chopped
Directions:
1.
Heat
oven to 400°F, and grease muffin pan or line with
paper cups. 2. In a medium bowl, combine apple juice, oil and egg; blend well.
3. Add dry ingredients all at once and stir just until dry ingredients are moistened (batter will be lumpy).
4. Stir in chopped apples.
5. Fill cups 2/3 full, and bake for 18-22 minutes.
6. Cool 1 minute in pan and serve warm.
